I love pinchos, the small snack typically eaten in bars in Northern Spain. They are related to tapas, the main difference being that pinchos are usually impaled–pintxo is Basque for “spike”–with a toothpick, often to a piece of bread. There are several great pinchos bars around the corner from our flat in Valencia; I know because I made it my mission to sample them all. 🙂
I like the honor system used for payment. You serve yourself from the platters of pinchos on the bar. When you want to pay, the waitperson counts the number of toothpicks on your plate to calculate the bill.
